I just made some hecka good crock pot chili. Like, it’s so good I’m gonna share it with you guys. It’s not the healthiest thing ever but it’s quick & easy to make and is awesome with some wine on a cold & foggy night! Here’s what i threw together:
17.6oz box of pumpkin soup (we got ours at Trader Joe’s)
15oz can of diced tomatoes w/ peppers
15oz can of garbanzo beans, drained (you can use whatever, I just had those lying around)
15oz can sweet corn, drained
4 andouille chicken sausages cut into ~coins~ (or whatever spicy sausage you like!)
4-5 chiles in adobo sauce (from a can of course), sliced
7-8 strips of bacon, pre-cooked and chilled
whatever bacon grease you can save from the bacon cooked prior, should be about half a cup or so
a little garlic salt, cumin, cinnamon, nutmeg
OKAY so like, basically the only “prep” involved in this recipe is to cook the bacon beforehand & chill it if possible. Once its ready just chop it up and toss it in the crock pot.
Put some of the bacon grease in a small pan and heat it up. Dice up those shallots and toss em in there with some garlic salt and fry em up till they’re nice & soft, then drop your sausage coins in there to cook for a minute or two. They don’t have to be fully cooked but it’s nice to give em some flavor.
While you’re watching that cook just put the rest of the stuff in (beans, corn, chiles, remaining bacon fat, etc) on high heat. Dump in the shallots/sausage mixture, stir, and let it sit with the lid on for like an hour or so. Since the meats have already been cooked you’re basically just waiting for the mixture to simmer & have all the spices infuse so once it’s hot you’re ready to eat!
Top with some goat cheese (or cheddar if you want) and ENJOY

I took Brian to Shiro’s Sushi for his bday tonight and we both got the Omakase dinner which is a fancy meal with several courses. We’ve had it a few times before but I’ve always forgotten to take pictures and write about it! Here’s a list of what we had for each course.
Appetizer: Shiitake and spinach salad, raw oyster with ponzu, poached salmon with red and green onions (the image i used for the appetizer in this post is from yelp bc i forgot to take one. The middle item pictured here is eggplant instead of the oyster i had.)
1: Salmon, maguro, and albacore sashimi
2. Green bean & shrimp tempura, miso roasted black cod (amazing!!!), and tamago
3. Albacore rolls, salmon roe, local smelt, salmon, albacore, marinated/seared albacore, with manila clam miso soup
Dessert. Tempura green tea ice cream
